Jamaican Chicken with Mango Salsa

Sweet 'n' Spicy salsa that tops Jamaican jerk chicken is highly appreciated.

Portion Size: 04

Preparation Time: 10 minutes

List of Ingredients:

• Drained and chopped mangoes (sliced and peeled) 1 jar (16 ounces)

• Skinless and boneless chicken breast halves 4 (6 ounces)

• Cooking spray

• Crushed red pepper ¼ tsp.

• Black pepper ¼ tsp.

• Fresh lime juice 2 tsp.

• Brown sugar 1 tsp.

• Chopped fresh mint 1 tbsp.

• Finely chopped red onion ¼ cup

• Fresh minced cilantro ¼ cup

• Salt ½ tsp., divided

• Jamaican Jerk seasoning (such as Spice Islands)

Procedure:

1. Take a medium to large sized skillet and put it over medium flame. Sprinkle the 1/4 tsp. of salt and seasoning evenly over chicken. Coat chicken with cooking spray. Put the chicken into the pan and cook for4 minutes on each side or until done.

2. Combine cilantro, 1/4 tsp. salt, and the remaining ingredients while the chicken cooks. Serve the chicken with salsa.
